We don't burn things for effect — we cook with embers because they're the most honest heat there is. Every dish is timed to the coals, not a dial, and the kitchen changes its rhythm with what the fire allows each night.
Matthias Rehberg opened Glut in 2015 in a former blacksmith's workshop in the Neustadt, with one rule for the kitchen: nothing that runs on gas. Every course passes over oak, apple, or grapevine embers before it reaches the sixteen seats in the room — the fire decides the char, the smoke, and half the menu.
